BEEF IN SPANISH SAUCE

This is the traditional way to cook Beef in Spanish sauce.There are some others recipes which we will use in other plates.
INGREDIENTS
· 1 big glass of red wine
· 3 cloves of garlic, sliced.
· 1 small glass of olive oil
· Salt, pepper and nutmeg
· Optional: a bay leaf.
· 2-3 carrots, cut into slices.
· 80 grs. peas.
METHOD:
· 1 kg. beef with no fat, in pieces.
· 1 and a half Spanish onion , chopped· 1 big glass of red wine

· 2-3 carrots, cut into slices.
· 80 grs. peas.
Heat the oil in a frying pan and fry the onion at medium temperature, avoiding the onion become “crunchy”.
When the onion will be in a golden color, put in the meat and stir well. Put everything in a saucepan.
In the same frying pan, using the rest of the oil, put the wine and let the alcohol evaporate for a couple of minutes.

Put this in the saucepan, add garlic, carrots and peas, salt, pepper and a little of nutmeg.
Add half of glass of water and cook at low heat until the meat is tender. It depends, obviously, what type of meat it is.
